Norway's largest farmed species and the most traded Norwegian seafood product. Buyers ask for it because supply is continuous through the year, sizes are predictable and the fish is produced to a consistent standard.

Catch and area
Farmed in sea cages along the whole Norwegian coast, from Rogaland to Finnmark, with the fish harvested at licensed slaughter plants close to the farms.

Formats and condition
Fresh head-on gutted (HOG) is the standard export format and is packed on ice. Fillets are traded with an agreed trim level (typically trim C, D or E), with or without skin, and as fixed-weight portions. Frozen HOG, fillets and portions are available for markets that cannot take fresh fish.
Typical sizes and grades
HOG is graded in 1 kg classes by gutted weight: 1–2, 2–3, 3–4, 4–5, 5–6, 6–7, 7–8 and 8–9 kg, with 3–6 kg the most common commercial sizes. Quality grades are superior, ordinary and production.
Typical packaging
Fresh fish in EPS boxes with ice, usually around 20 kg net, stacked on pallets. Frozen fish in cartons, often 20–25 kg, or interleaved fillets in cartons.
Typical uses
Hotels and restaurants (fillets and portions), retail (portions, fillets and whole sides), and processors for smoked, marinated and ready-meal products.
