Stockfish is unsalted cod dried on wooden racks in the open air of northern Norway. Buyers in Italy, Nigeria and other markets ask for it by grade and size.

Produced in Lofoten and other parts of northern Norway from the winter cod fishery; the fish hangs on racks from late winter and is taken down in early summer.
